As many of you know (and as many roommates can testify), I have a cake disability. I'm just not good at it. I either leave it in too long and burn it, or it comes out smelling and tasting like an omelet. I'm not sure how I do it. I can follow the recipe verbatim, but still I will fail.

You know how not to make a cake taste like an omelet (assuming you're me and not a normal person who can make cake)? Don't use eggs.

I tried my hand at vegan cake. It was tasty. Not the best cake I've ever tasted, but definitely the best cake I've ever made. I was skeptical at first - it had avocados (I assume to take the place of the egg) in it. And it pretty much smelled like guacamole until it was about halfway done baking, which was disturbing. But it turned out pretty edible.

What was even more disturbing, though, is the icing that went with it. Avocado buttercream (although it included neither butter nor cream). That was weird. But clicky and look how pretty they are!. I just had to try it.

My icing (not frosting - something has to be truly decadent for me to call it frosting. I realize that these terms are interchangeable for most people, but not for me.) was a darker green, but it turned out okay. I was not a big fan, because while I am in favor of cramming as much sugar as one possibly can into icing, I am not a fan of cramming any sugar at all into avocado. Noted.

This is not an icing that I'll be using again any time soon, but I think that I have found a not-so-bad-for-me cake. Happy.

I am a huge avocado fan... but I don't know that I could do this. On the other hand, [livejournal.com profile] syasnomis does not like chocolate and abhors avocados with a singular passion.

I might have to make this for his birthday. ;)

It's worth trying at least once. My advice is use about half the sugar in the icing, and it won't be so freakish.

Also, I believe that I need to see a picture of [livejournal.com profile] syasnomis's face when he tries it. :)

I love chocolate cake. I love avocados. Still, I'm a little freaked out by the frosting.

How in the world does cake taste like an omelette? I eat a good portion of the batter (from a box mix) everytime I make a cake, but I never distinctly taste egg in it. Nom.

I suggest half the sugar in the icing if you try it. It was super sweet.

I have no idea how my cake actually tastes like eggs. I have had people watch me, and still it fails.

Stupid browser . . I was going to say, I don't know about the frosting, BUT I have a recipe somewhere called "Crazy Cake." It's a chocolate cake that uses NO refrigerated ingredients - no milk, no eggs. It turns out SO DELICIOUS!!! It's amazing!!! There's also no avocados! If you just want to have frosting on the cake and not make it, you can just buy some stuff from the store. I love that cake. It's been awhile since I've made it, but whenever I do, everybody loves it!

I am intrigued by this Crazy Cake. I think I need to try it.

I don't remember the last time I bought ready-made frosting. It's just not as good, and homemade frosting is so super easy to make that there's just no point to buying it.

Man, I could really go for some of my coffee buttercream frosting right about now...

This looks to be like it is the same recipe. I remember I found the crazy cake recipe in an old Women's Day Cookbook.

Crazy Cake

Yes, it is made in one pan. No bowls are needed. The wells should be made, but I have done it without doing that . . . though it is supposed to help it - easy either way, though.

So, there's a recicpe for a cake with no eggs (or any refrigerated ingredients) that tastes REALLY good!

I never made any jam glaze. Once, I think I might have just done the simple glaze where water and powdered sugar is mixed and put a bit of glaze on top. I remember doing that.

- and of course, you can make any type of frosting and put it on this cake.
